COFFEE BIOGRAPHY

San Lorenzo is a farm owned and operated by Roxana Chambi in the Caranavi province of La Paz. It was founded in 2019. The 5-hectare farm sits at about 1550 masl. Coffee is picked by hand and dried under the sun (with or without the fruit) to the desired moisture content.

This is a first for Clarity: we're putting out a natural and a washed from the same farmer, same variety, same everything. The only difference between the two coffees is how they were processed.

Processing is how we refer to the method of extracting the seed from the cherry, and this release is the perfect way to illustrate how it impacts the flavor of the coffee.

In a washed coffee, the fruit is stripped off the seed soon after picking, the sticky layer underneath is fermented and washed away, and the seed dries on its own. That tends to give a cleaner, brighter cup where the character of the farm and variety really shines through.

In a natural coffee, the whole cherry is dried with the fruit still on, and the seed soaks up some of those sugars and flavors as it dries. That tends to give a sweeter, heavier-bodied, more fruit-forward cup.
