Wush Wush is a variety native to Ethiopia that’s known for notes of tropical fruit and sugary sweetness. This is processed by a washing station in Oromia owned by Asnake where they use a natural processing method to produce a spectacularly fruity and floral cup, especially when it’s the Wush Wush variety.
COFFEE BIOGRAPHY
Last year, we featured our first Wush Wush for our birthday (which is 12/8 btw.) It was a huge hit. The extreme sweetness and unmistakable fruitiness had people going nuts for it. Last year, it was an anaerobic natural, meaning it underwent part of its fermentation process without oxygen. This year’s is a traditional natural.
If you're familiar with gesha coffees (like the one we featured for our birthday a few years ago,) Both Wush Wush and Geisha have followed similar paths through the coffee supply chain. They both originate from Ethiopia, have been relocated to the Americas, and have unique sensory qualities that specialty coffee consumers often look for in the cup.
Imagine hillsides filled with raised beds for processing natural and washed coffees. They line up along the beds to turn the coffees regularly to make sure they dry evenly while a manager would walk along, picking up coffee and listening for the right sounds to know where they are in the drying process. Seasoned professionals doing what they do best.
